POTENZIALITÀ E APPLICAZIONI DEI BDELLOVIBRIO AND LIKE ORGANISMS (BALOS) NEL SETTORE BIOTECNOLOGICO E DELLA FILIERA ALIMENTARE

Abstract Thanks to their natural ability to eliminate Gram-negative bacteria, BALOs (Bdellovibrio and like organisms), predatory bacteria, have great potential as biological control agents towards different bacterial populations. Many practical applications of BALOs in various sectors of biotechnology have been extensively described and the studies conducted by Istituto Zooprofilattico Sperimentale dell’Umbria e delle Marche - Food Control Laboratory of Ancona confirm even more the value of these microorganisms: it has been shown that BALOs are naturally present in molluscs growth areas of the Adriatic sea, are bioaccumulated by the molluscs themselves and probably play the role of biological regulators in bacterial population dynamics, being predators of pathogenic vibrios. In another study by the same research team, Bdellovibrio bacteriovorus species was able to control and reduce E. coli concentrations in short-lived meat foods, usually less than ten days. In light of this evidence, BALOs could find application in post-harvest decontamination treatments for bivalves as well as extend the shelf life of fresh meat foods and improve their safety.
