LA VERIFICA ANALITICA IN REGIME DI AUTOCONTROLLO NELLA RISTORAZIONE COLLETTIVA NEL PERIODO 2018/2021

Abstract   This paper describes the results of microbiological analysis in public catering services, in the years 2018-2021. Analytical checks in collective catering canteens have the purpose of verifying the production process and are a tool for applying the HACCP system (Hazard Analysis and Critical Control Points) to guarantee the application of correct sanitary procedures to control the risk. The information on the hygienic state of food and processing environments allow a proper risk analysis of each production process, for a critical review of the HACCP system.
