Abstract This paper describes the results of microbiological analysis in public catering services, in the years 2015-2017. The results of analytical tests are a useful tool to verify that the HACCP system is effective in order to contain microbiological risks. The information on the hygienic state of food and processing environments allow a proper risk analysis of each production process, for a critical review of the HACCP system.
